Let's Make Beet Burgers!

This beet burger recipe is simple and delicious! You only need 1 bag of our Naked Beet Chips to recreate this recipe. These burgers are vegetarian, vegan, dairy free, and gluten free!

Yields: 2-4

Prep Time: 40 mins

Ingredients:

*1.4oz bag of Rhythm Naked Beet Chips

*3/4 cup canned black beans (rinsed)

*1/4 cup tri-colored quinoa (yields about ½ cup cooked)

*1/4 cup cubed small purple onion

*1/4 cup of finely chopped parsley

*2 garlic cloves finely chopped

*1/4 tsp dry thyme

*1/4 tsp smoke paprika

*1 tbs all-purpose flour or oat flower

*Salt and pepper to taste

*Olive oil

Instructions:

On a pot cooked quinoa with about ½ cup of water, while that is cooking at medium high heat for about 15-20 mins, start chopping and weighting out the rest of ingredients.

Place the onion and garlic on a pan with a drizzle of oil and sauté for about 4 mins. Remove from heat and set aside. On a small colander throw the beets and run them with lukewarm water for 20-30 seconds (this will help soften the beets without making them mushy) lightly squeeze them to get some excess water out.

When the quinoa is done cooking, let is cool down for 5 mins meanwhile using a food processor pulse the beet to get small pieces (not puree) then add the beans and pulse again once it starts forming a light paste add the quinoa, the sautéed onion, garlic and dry ingredients and pulse/mix again. Dump that mix on a bowl and by hand incorporate the parsley.

Heat a pan at medium heat before starting forming your patties, once the pan is heated add a bit of oil and place the patties, reduced the heat just a bit and let them cook for 5 mins then flip (add a bit more oil of needed) and let cook again for another 5 mins.

Place in a cooling rack and done! You have your beet patties to make delicious meatless burgers.

Enjoy!
